Sometimes the simplest meals become the favorites.
This avocado toast actually became one of Nash’s favorites because he kept seeing me (Mom) eating it for breakfast.
One morning he decided to try it for himself, and after the first bite it quickly became an instant favorite. Now it’s something he asks for regularly and even makes on his own.
In the video, Nash shows exactly how he likes to build his avocado toast: creamy avocado, salty feta cheese, and a drizzle of balsamic glaze. The flavors work so well together — savory from the avocado, salty from the feta, and just a little sweet and tangy from the glaze.
And the best part? It’s simple, nutritious, and easy enough for kids to make themselves.
Why This Avocado Toast Is So Nutritious
One of the reasons I love this breakfast is that it naturally combines healthy fats, fiber, protein, and complex carbohydrates—which makes it filling and energizing.
Avocado
Avocados are one of the most nutrient-dense fruits you can eat.
They provide:
• Heart-healthy monounsaturated fats that support brain health
• Fiber for digestion and long-lasting fullness
• Potassium (even more than bananas!)
• Vitamin K, Vitamin E, and Folate
The healthy fats in avocado also help your body absorb fat-soluble vitamins from other foods.
Feta Cheese
Feta adds a delicious salty bite and a boost of protein.
Nutritionally it provides:
• Protein to keep kids full longer
• Calcium for strong bones
• Vitamin B12 for energy and brain health
• Beneficial fats that help with satiety
Because feta has such a bold flavor, you only need a small amount to make a big difference.
Balsamic Glaze
A little drizzle of balsamic glaze adds sweetness and acidity that balances the richness of the avocado.
It also contains:
• Antioxidants from grapes
• Polyphenols that support heart health
• Natural flavor that helps reduce the need for added sugar
Just a small drizzle goes a long way!
Fresh-Milled Sourdough Bread
We love making this toast on our fresh-milled sourdough sandwich bread.
Fresh-milled flour contains the entire wheat kernel, including the bran and germ, which means it retains:
• More fiber
• More B vitamins
• Iron, magnesium, and zinc
• Higher nutrient density than refined flour
The sourdough fermentation process can also make the bread easier to digest and helps unlock nutrients in the grain.

Our Favorite Variations
One of the best things about avocado toast is how easy it is to customize. Around our house we mix it up depending on what we have available.
Some of our favorite additions include:
• Cherry tomatoes for freshness and vitamin C
• Jalapeño relish for tangy heat
• Paprika or cayenne depending on how spicy you like it
• Eggs (fried, scrambled, or hard-boiled) for extra protein
• Shredded chicken with hot sauce instead of balsamic glaze
• Sun-dried tomatoes for concentrated flavor
These additions can easily turn avocado toast from a quick snack into a complete high-protein meal.
A Great Breakfast for Kids
One of the reasons I love this recipe is that it’s something kids can easily learn to make themselves.
It’s simple, nutritious, and gives them a chance to experiment with flavors in the kitchen.
And if Nash has anything to say about it… don’t forget the balsamic glaze.
A Note About the Balsamic Glaze
In the video, Nash uses a store-bought balsamic glaze to finish the avocado toast. It’s a quick and easy way to add that sweet, tangy drizzle on top.
If you want the same convenience, you can use a glaze like this one:
→ Balsamic Glaze
Many store-bought glazes use thickeners to create that syrupy texture. If you prefer a more traditional option, you can easily make your own balsamic glaze at home by slowly reducing balsamic vinegar until it thickens naturally.
Start with a good balsamic vinegar like this:
→ Balsamic Vinegar
Simply simmer about 1 cup of balsamic vinegar on low heat for 10–15 minutes until it reduces by about half and becomes thick enough to coat a spoon. It will thicken even more as it cools.
Either way works great — the goal is that sweet and tangy finish that pairs perfectly with creamy avocado and salty feta.
