They’re too valuable.
This is how I make vanilla sugar in our kitchen — using whatever empty pods I already have on hand, plus one fresh bean for an extra boost of flavor.
It’s simple, intentional, and builds better flavor over time.
Ingredients
- 2 cups cane sugar (400 g)
- 1 fresh vanilla bean
- 1 additional used vanilla pod (or however many you have saved)
How I Make It
1. Scrape the Fresh Bean
Split 1 vanilla bean lengthwise and scrape out the seeds.
Set the empty pod aside — we’re using that too.
2. Blend the Seeds for Even Distribution
Add the scraped vanilla seeds to a spice grinder with a small scoop of sugar (about 1–2 tablespoons / 12–25 g).
Pulse until the seeds are fully broken up and evenly distributed into the sugar.
This step prevents clumping and ensures those beautiful specks spread evenly throughout the entire jar. Careful not to make too much powdered sugar doing this.
3. Combine & Infuse
In a glass jar, add:
- 2 cups (400 g) cane sugar
- The vanilla-sugar mixture from the grinder
- The freshly scraped pod
- Any additional used pods you have on hand
Seal tightly and give everything a really good shake to incorporate.
Bury the pods down into the sugar so they can continue infusing.
Let It Build Flavor
The flavor deepens over time. You’re going to want to let this sit for a minimum of 3 days before using it.
You can:
- Add more used pods as you accumulate them
- Shake the jar every few days
- Keep it stored in a cool, dry place
It will keep indefinitely as long as moisture stays out.

1. In Coffee or Homemade Coffee Creamer ☕
Stir 1–2 teaspoons into hot coffee or use it in your homemade coffee creamer for a subtle, warm vanilla sweetness without needing extract.
2. In Whipped Cream
Add 1–2 tablespoons (12–25 g) to 1 cup (240 g) heavy cream before whipping.
It gives the most beautiful depth of flavor — especially over pudding, pies, or birthday desserts.
3. In Baked Goods
Swap regular sugar for vanilla sugar in:
- Muffins
- Sugar cookies
- Pound cake
- Sandwich bread
- Pancakes & waffles
It adds a gentle, layered sweetness without overpowering the recipe.
4. Sprinkled on Top Before Baking
Sprinkle over:
- Scones
- Banana bread
- Blueberry muffins
- Pie crust edges
It creates a lightly crisp, aromatic topping with those pretty vanilla specks.

A small spoonful over sliced strawberries, peaches, or warm oatmeal makes it feel intentional and special — especially for kids.
