Ingredients

  • 2 ½ cups (315 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup (113 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups mashed ripe bananas (about 3 medium)
  • 1 cup diced rhubarb
  • ½ cup Greek yogurt

Instructions

Get Started

Preheat your oven to 350°F (175°C).


Add Almost Everything to the Bowl

Into your mixing bowl, add: butter, sugar, eggs, vanilla, mashed bananas, Greek yogurt, flour, baking soda, baking powder, salt, and cinnamon.

Yes — it all goes in!


Mix

Mix until everything is incorporated.

Scrape the sides if needed, but don’t overmix.
Once the flour disappears, you’re good.


Fold in the Rhubarb

Add the diced rhubarb and gently fold it in by hand.

This keeps the fruit nice and evenly distributed without breaking it down.


Into the Pan

Give your loaf pan a quick spray with olive oil or your go-to non-stick helper. Then add the batter and smooth it out.

Optional but lovely: sprinkle sugar on top for a little sparkle and crunch ✨


Bake

Bake for 55–65 minutes, until a tester inserted in the center comes out clean or with a few moist crumbs.

If the top starts to brown too quickly, tent loosely with foil.


Cool

Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack.

It slices better once it has a chance to set.


Slice & Serve

Serve warm or at room temperature.

It’s wonderful plain, spread with butter, or even topped with a little extra Greek yogurt.

Storage

Store covered at room temperature for 2–3 days or refrigerate for longer freshness.
